Rubs & Marinades

Rub or Marinade, which one is the best and when is the best time to use it?  While there is definitely a difference between the two a certain amount of it is a personal preference.  Below we will explain the difference between the two and then you can choose which one will work best for your circumstance.

Rubs

A rub is in powder form that you rub directly on the outside of the meat prior to cooking. The primary function is to add or enhance the flavor of the meat.  But it also can help tenderize the meat.  The best way to use the rub is to thoroughly coat all sides of the meat, with very little if any of the actual meat showing through.  Then wrap the meat or place in a covered container and let the meat stand in a refrigerator for at least four hours prior to cooking.

Marinades

A marinade is a liquid that you either let the meat soak in or inject into the meat.  The primary function is to tenderize the meat, but also will enhance the flavor.  Most marinades contain some acid component which helps break down the meat fibers and therefore helps to tenderize the meat.  Place the meat in a sealed baggie or container and place in a refrigerator for at least four hours prior to cooking.
